Nenu Family: Review & Giveaway

My boys love anything in a cup, whether it's yogurt or applesauce.  They love to feed themselves.  We have a variety of spoons from all over.  I let them pick out their spoons too.

Death by chocolate cookie goodness!

I wanted to share this recipe I found!  It is delicious and my new favorite.


Taste the chocolate explosion.


  • 2 Tablespoons (30g) unsalted butter, softened to room temperature
  • 2 Tablespoons (25g) granulated sugar
  • 2 Tablespoons (25g) packed light brown sugar (or dark brown)
  • 2 Tablespoons beaten egg (crack an egg, beat it, and use 2 Tablespoons)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup (32g) all-purpose flour (measured correctly)
  • 2 Tablespoons (11g) natural unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup (55g) dark chocolate chips + 1 Tablespoon, divided (or semi-sweet chocolate chips)
  • sprinkles, optional


  1. Preheat oven to 350F degrees. Line a cookie sheet with parchment paper or silicone baking mat. Set aside.
  2. In a medium size bowl, mix the softened butter and sugars together with a spoon or fork until creamed. Mix in the egg and vanilla.
  3. In a separate small bowl, mix the flour, cocoa powder, baking soda, and salt. Pour the dry ingredients into the wet ingredients and mix to combine. Fold in 1/4 cup chocolate chips.
  4. Place the dough in the center of the baking sheet and mold into a tall ball using a spoon (see picture above). Dot the top of the cookie with 1 Tablespoon of chocolate chips. Add sprinkles on top if desired. Bake for 14-15 minutes, or up to 16 minutes. The cookie will appear very soft, but will firm up as it cools. Allow to cool completely on baking sheet

Back to school festival

We went down the street to the Altus ER building where they were having a fun back to school festival. There were bouncy houses, vendors, samples, demos, free snow cones and a view of a helicopter landing. It turned out to be fun and different than the usual boring Saturday's we have these days. We are still getting things figured out with not only my doctor but with Joe's job. It's awesome...

So here are some pictures from yesterday.  The kids thought the gator was pretty cool to hold!

Then Emma did a work out routine with a local gym. She hasn't stopped talking about them! She wants to sign up to do their kids class... That or Kung Fu....

They gave everyone a snow cone but just let people in charge of putting the syrup on. Let's just say they definitely has 80 % juice and 20% ice😁

 Those alone were worth going for. It was super hot. Like every day...

Is there a doctor available??

Trying not to freak out but I still don't have a doctor down here...
I'm almost 35 weeks and we've been here for a month. My insurance kicked in 2 weeks ago. All the while I didn't think it'd be hard to find one and make an appointment. But I was wrong 😕
There are very few doctors that take my insurance and then also finding one that has an opening sooner than October!   

And the website to keep searching for a doctor is down so I just have to wait. I wasn't too worried before but I'm started to freak out a little bit.  At this point,  I may have to go over to Houston and find a doctor! This is just crazy!!

Ok I think this vent session has helped a little bit. 

In other news, the kids are getting ready for their first day of school on August. 24th.  I got them registered a few days ago and got all their school supplies yesterday.  So now I gotta figure out lunches and buses and we will be set.  

Try not to panic and just take it easy...

Kate's Baptism Announcement

I just can't believe she is 8 years old!
Kate has decided to be baptized a member of the Church of Jesus Christ of Latter-Day Saints this next Saturday.  We are so proud of her. I am so happy she is part of our family.

She is the mini mom.
She is the peacemaker.
She is kind.
She is nurturing.
She is loving.
She is content.

She's ours!

29 weeks

So let's just get something straight. My timing with my pregnancies have been just horrible. Why do I think being full blown pregnant during the hot sure months is a good idea??

I'm 29 weeks this week. The past month, I've just exploded. I definitely can't move around like I used to anymore. My fitness goals have slowed down. And pretty much any goal I had had flown out the window. Haa haa. I'm hitting the " I don't give a crap" phase.  Seriously I'm at a point where I'll deal with the weight and weakness afterwards. I just can't right now.  I've started walking in the mornings, about 3 miles each time. Feeling good but I feel it for sure by night hits.

On top of all this, our family is dealing with the stress of moving and figuring out when and where we are moving. That's always fun. That causes more sugar binges than I'd like to admit.  We will see what next week brings✌🏻️

Banana Bread Cookies

A good friend of mine gave me a mini loaf of banana bread a few days ago. It hit the spot and I wanted to make some with the bananas that were starting to brown. I told Kate that we should make some and then she suggested making banana bread cookies! I told her that it could work out since we have made pumpkin bread cookies the same way. 
So this evening, I gave it a try and they turned out amazing and delicious! I'm trying to stop myself from eating the whole batch!

Wanted to share them with you invade you want to give them a go!

Banana Bread Cookies

1-2 c. Butter, softened 
1 c. Sugar
2 eggs
3 ripe bananas
1/4 c. Sour cream
1 tsp. Vanilla 
2 c. Flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 c. Semi-sweet chocolate chips

Set oven to 350 degrees.  Cream sugar and butter. Then add eggs & bananas and mix well, leaving no clumps.  Then add sour cream and vanilla.
In a seperate bowl, combine the dry ingredients. Then add it to the wet ingredients and mix well.  Fold in chocolate chips.  

Spoon out desired amount of dough onto a baking sheet covered with parchment paper or silicone cover.  Space about 2 inches apart.  Place in oven for about 14 mins.  Once done, place on cooling rack. And then eat them all before the kids find out you made them 😉


Kate's Soccer Season

Kate had an amazing soccer season!  She really loved playing and told me she wants to play forever!
Joe was able to be one of the coaches this year, which is awesome.  They kids love that :)
Kate loved playing goalie and also charging up the field to score some goals!

Jake at 2 1/2.

Jake, you are such a fun loving little boy and I still just can't get enough of your contagious spirit and cuteness.  Seriously so grateful you are part of our family.  And you'll be one heck of a big brother.

Easter 2015

Took the kiddos out to an empty lot down the street and took some easter pictures.  Really love this time on day!  Perfect light!
My little bunch is growing up.  It continues to feel weird to look back at pictures and realize how fast it goes by.
